Tortilla Chip Salad

Tortilla chip salad combines snack food favorites onto one plate, creating the appearance of an actual meal. It is delicious and always a winner. Even though my family might be onto me, it tastes so good, no one says anything.

Ingredients:
1 Tablespoons of Canola Oil
1 Pound Ground Beef or Chicken Tenders
2 Tablespoon Enchilada Powder
Tortilla Chips
Iceberg Lettuce
Refried Beans
Nacho Sauce
Salsa

Preheat a pan to medium and add oil. After the pan is heated place either ground beef or chicken tenders into the pan. Evenly sprinkle enchilada powder over the meat. Premade enchilada powder is available at supermarkets. Bags cost less than a dollar and you get a lot of spice. Reuse salt shakers or cans by refilling them with inexpensive spices. Consumers waste money on fancy glass spice holders when all they wanted was the spice.

After is has cooked a couple minutes start flipping the meat. After the meat is slightly brown press down into the meat with the edge of a spatula. It separates it into bite sized pieces without spending more time dicing or balling the meat. Don't worry if it is difficult to cut at first. When it is thoroughly cooked it separates easily. After ground into small chucks, take it off of the burner; let it cool in the pan.

Now take a plate and spread tortilla chips evenly across the bottom. Drip refried beans over the chips. Recipes for refried beans, nacho sauce and salsa are found in "Taco Maximization." Next add ground beef or chicken tenders generously by letting oil slide off the spatula. Then only the spicy meat goes on top of the refried beans.

Hopefully the nacho sauce is already done. Spoon dobs of nacho sauce over the meat, covering it from the center out to the edges. Then add a layer of torn lettuce. Add salsa to complete the overall appearance of a salad with a lot of hidden treasures.

It is easy to make; however, unless you keep refried beans, nacho sauce and salsa around the house, it may be a hassle. I love quick snacks. Forget the salad. Put refried beans, nacho sauce or salsa into a bowl; dip a handful of chips and get back to work or study. It is tasty and nutritious: satisfying two major points of eating.
