Ingredients:
Diced Strawberries
Sliced Mint
7 Ounces Tofu
2 Cups Vanilla Soy Milk
1 Banana
Dice around five to seven strawberries. Slice a few mint leaves into strips. Add tofu, soy milk and banana to blender. Start blender on chop and move to liquefy. Stop blender and add about a handful of strawberries or whatever sounds good. Puree it together. Serve in a cold glass and sprinkle with mint.
When working with light flavors found in foods like tofu, natural sugars or fructose is the best option. Basically a banana substitutes refined sugar and vanilla extract. Frozen fruit and berries are a good substitute for fresh fruit. This recipe allows for any combination of fruit or berries. Variety is a wonder, especially if trying to stick to a vegan or vegetarian diet.
