Lemon Chicken

This adaptation of a Mediterranean dish is mouth watering. The lemon and spices reminds me of my favorite Greek restaurants. It can be served for lunch or dinner and is an excellent addition to any meal plan.

Cucumber Sauce Ingredients:
1 Quart of Plain Yogurt
1 Diced Cucumber
1 Teaspoon of Cumin
1 Teaspoon of Nutmeg

Lemon Chicken Ingredients:
1/2 Cup of Extra Virgin Olive Oil
1 Pound of Chicken Tenders
1 Sliced Medium Yellow Onion
1 Teaspoon of Lemon Pepper Seasoning
1 Tablespoon of Parsley
1 Teaspoon of Lemon Juice
1 Sliced Tomato
1 Package of Pita or Flat Bread

The cucumber sauce has to chill for three hours, so make it in the morning and it is ready for dinner. Pour the plain yogurt, cucumber, cumin and nutmeg into a large bowl and mix together with a large spoon. Cover and place into the refrigerator for a minimum of three hours.

Getting closer to dinner time or after getting home from work, it is time to start preparing the chicken. Pour the extra virgin olive oil into a pan. Preheat the pan on medium-low. If the tenders are fresh, remove the tendon before setting them in the warm oil. If they are frozen, remove the tendon after they are already cooked. After they are cooked and brown on both sides remove them from the pan and place them on a paper towel.

Prepare the onion by slicing it in half. Remove the outer layer and chop off the ends. Place the onion flat side down and slice it about every half inch. Let the onions cook in pan for a few minutes. After the chicken has cooled enough to touch, dice tenders into half inch squares.

Place the chicken back into the pan. Sprinkle the lemon pepper seasoning, parsley and lemon juice evenly across the top of the chicken and onions. Let it cook a couple minutes between flipping the chicken and onions together with a spatula or wooden spoon. It takes about fifteen to twenty minutes to cook. The chicken is lightly brown with dark edges.

Turn the burner off and slice the tomato. Place the pita or flat bread on a microwave safe dish and cover with a paper towel. It only takes 20 seconds to heat one and up to 30 seconds for two. They should be slightly warm.

There are two plating option for flat bread and lemon chicken. Place everything next to each other so it is easy to build a sandwich or eat everything separately. The other option is to lay bread in the center of the plate and stack a sandwich in advance. It is stacked: bread, chicken, onions, sliced tomatoes and two tablespoons of sauce on top. To eat the sandwich, form the shape of a taco shell by lifting the edges together.

Making additional sauce is advantageous, even though it only stays fresh in the refrigerator for about a week. It goes well with other dishes and can substitute mayonnaise in sandwiches. It is better to have enough sauce than having a dry meal.
