Coleslaw and Salmon

This is one of the best dishes for a relaxing Friday date or Sunday dinner. Onion and lemon balances out the fishy flavor of salmon making it taste fresh. This is one of my favorite meals for the weekend. Fish is full of important nutrients. Coleslaw is a perfect side dish to compliment any fish.

Coleslaw Ingredients:
2 Cups Thinly Sliced Cabbage
1/4 Cup Finely Diced Onion
1 Finely Diced Carrot
1 Finely Diced Celery Stick
2 Tablespoon Miracle Whip
Sprinkle of Nutmeg
Sprinkle of Salt
1 Teaspoon Lemon Juice

Take all ingredient and mix together with a fork in a large bowl. Too make sure everything is blended place a lid over the top and shake well. Place in the refrigerator and chill for an hour before serving.

NOTE: Substitute Miracle Whip by mixing two tablespoons of mayonnaise and with a teaspoon confectioner sugar.

Salmon Ingredients:
Salmon Filet
Sliced Onion
1 Tablespoon Butter
1 Tablespoon Lemon
1 Teaspoon Black Pepper

Preheat the oven to 350 degrees. Take a large piece of aluminum foil and place onion slices along the bottom. Coat salmon in butter and place it skin side up over the onion slices. Drizzle lemon juice and sprinkle pepper over the salmon. Now take edges of the aluminum foil and create a pocket with a small opening on top to release the steam.

Place it in the oven and let it cook for ten to twelve minutes. Turn the heat off and leave the salmon in the oven for about a half hour. Take it out of the oven and serve. Remaining heat in the oven cooks the salmon without worry of it burning so it is moist and flaky.

Enjoy this twist on a classic meal. Often people rely too heavily on spice. This recipe enhances natural flavors of food. Occasionally it is good to let the main ingredients shine. Add some fries if you like "Fish and Chips."
